While flipping through my dad’s notecards — I had a hard time deciding on which recipe to make first. It was a toss-up between a few different ones, but the moment I came across his recipe for Mussels in a Thai Coconut Broth, I stopped my search immediately.
I’ve only made mussels one time before without my father’s guidance, and needless to say, they weren’t as delicious. However, now that I am the keeper of this recipe — I will be making them this way a lot more.
I turned on a chill jazz mix, poured myself a glass of Pinot Grigio, and began gathering my ingredients. As I started prepping my station, flashbacks of my father and I cooking during summer vacation popped into my head. He was so patient and always encouraged me to practice it more. I often got frustrated when I didn’t get things right the first time or when things didn’t come to me quickly enough, and he always knew what to say to help keep me calm.
I wish I could’ve made this with him; he would have been proud of how it turned out, and I’m pretty amazed at how it tasted!
