Last week was the first anniversary of my father’s passing. Truthfully, I can’t believe it has already been a full year. They aren’t lying when they say that time flies!

As the day got closer, I found myself missing our connection even more and felt that I had to do something to honor him. One of my favorite ways to bond with him was by listening to fun stories about experiences he had, so I reached out to some of his closest friends and family and asked them to share a video featuring a memory they had of my father. I always knew he was the life of the party, and it was once again confirmed after hearing those stories.

Additionally, I had to make something in honor of him — so I decided to finally cook his Pecan Encrusted Catfish. Thankfully, my friend Lulu joined me because I never really knew how to cook for just 1 person. The catfish was incredible! It was perfectly seasoned and had a wonderful crunch that added such great texture to the cooked fish.
