My good friend Christine is starting a new chapter in her life and I wanted to do something to celebrate her new beginning. I felt like cooking her a love-infused meal would be a great way to applaud her on her new journey. Anytime I host, I usually try to visualize how the evening or event would go, and this time I had a vision of us sitting outside on my newly redecorated patio while admiring the sunset and sipping white wine. I needed to find a dish that would compliment this vision, so, as always I turned to my father's recipe book and I came across his Scallops with Mushrooms & Asparagus dish.

Not only would this dish pair well with the white wine we would be enjoying, but I already had a majority of the ingredients, so it was perfect. I had some frozen scallops in the freezer that I’ve been meaning to make and I recently picked up some asparagus at my local farmer’s market. The only things I needed to grab were sherry wine, unsalted butter, and grated parmesan cheese, so I made my way over to my neighborhood grocery store to grab them!

As I began making our meal I couldn't help but think about change and new beginnings. Change is inevitable; with it, we often see ourselves in new situations, environments, and chapters. I used to be so afraid of the unknown and would constantly worry about how to navigate it, but I recently read a quote that said that worrying is only a rehearsal for the exact thing you don't want to happen. Some change is good and sometimes it's difficult, however, I am thankful that regardless of the change that will take place in my life I have cultivated a beautiful community that will help get me through it. And I am honored to be a part of Christine's community as she navigates this change in her life too!
