One of my favorite fall breakfast treats is something that might come to you as a surprise. It’s not the pumpkin spice lattes or slightly crispy pancakes with cinnamon spice syrup (although that sounds amazing). It's a delicious sweet potato hash seasoned with curry and fennel and pairs perfectly with eggs, breakfast sausage, or bacon.
It’s made up of incredible ingredients that are packed with anti-inflammatory properties, antioxidants, and digestive aids. I have been playing with the variation of the spices for some time but just recently found the perfect blend of them that balances the sweetness from the potatoes nicely.

Now, I am a firm believer that curry and sweet potatoes are soul mates. I remember tasting the fantastic combination at a random restaurant while on a lunch break. I ordered the sweet potato fries with a curry aioli. The sweetness and crunchiness from the potato married perfectly with the earthy flavor of the curry. From then on, curry accompanied every sweet potato dish I've created (except sweet potato pie, I'm not quite that adventurous). Below is a list of some of the seasonings I used and the benefits they contain.
Curry Power
A blend of flavorful spices that boost your immune system and may help to fight cancer and combat Alzheimer's and Dementia. My favorite curry powder is from the Simply Organic brand. Organic Turmeric - contains a natural compound called curcumin and has anti-inflammatory and antioxidant properties. Spiritually, turmeric is used for purification.
Organic Cumin - has antibacterial effects and may help with cancer prevention and the management of diabetes and cholesterol. Spiritually, cumin can be burned with frankincense for protection.
Organic Coriander - Did you know that coriander and cilantro are the same thing? I learned that earlier this year and was even surprised that small flowers bloomed on the plant. According to heathline.com, coriander may help to reduce blood sugar and promote digestion and gut health. It is also filled with immune-boosting antioxidants. Spiritually, coriander can help attract love.
Organic Clove - Cloves have been used to help with dental pain for centuries, can help lower blood sugar, and may protect against cancer and relieve itchy skin. Spiritually, clove can be burned as incense to attract riches.

Fennel
Fennel is a delicious licorice-tasting ingredient that is rich in vitamins A and C, iron, and calcium. For this dish, I used the seeds of the vegetable to add a touch of that licorice sweetness. Fennel is used to aid in digestion and has been added to teas to reduce inflammation in the bowel and decrease gassiness. Spiritually, Fennel is also protective and also purification.
